Pistachio Crusted Lamb Chops
6-8 loin or rib lamb chops
2-4 cloves minced fresh garlic
¼ C. fresh lemon juice
2eggs beaten
2C. Ground Pistachios (grind extra fine in food processor)
2Tbls. Pandora lamb seasonings
1Tbls. mint leaves , minced
Marinate chops in garlic& lemon juice several hours turning 2 to 3 times. Pat dry with paper towel, dip in egg then in pistachios making sure they stick well to chops by patting with hands. Place in single layer in shallow glass baking dish/ glass cake pan coated with evoo. Sprinkle with lamb seasoning and minced mint. Spray all with evoo from cooking atomizer. Bake 325 until tender. Try not to disturb chops any more than necessary so pistachios don't fall off.
