2 lb Harris Farm ground lamb

1C fine or medium bulgar wheat

2C boiling water

2 to 4 cloves minced fresh garlic

2 sweet onions

4 generous T Pandora lamb seasonings

2 T dried or fresh mint finely chopped (I use spearmint )

3 T fresh lemon juice

2 T EVOO (Extra Virgin Olive Oil)

Add wheat to pan of boiling water,cover and remove from heat. Let sit until all H2O is absorbed.Grind garlic and onion in food processor until very very fine. Mix lamb,onion,garlic,seasonings,mint,lemon juice, evoo and cooled wheat really well (cake mixer). Pat firmly into a 9x13 oiled cake pan. Cut with sharp knife into diamond shapes or squares before putting into a 325-350 oven for 50-60 min. Recut with knife and serve with taboule and tzatiki sauce.
